Popcorn seems like a straightforward snack to prepare. However, as anyone who’s managed to burn a microwavable bag can tell you, perfecting your popcorn can be easier said than done. This is especially true if you’re going the old-school route, with popcorn prepared over a stovetop or open flame.

Luckily for us popcorn lovers, there is a trick to the trade of perfectly popped corn, and it’s most likely hanging out in your kitchen right now. Instead of covering your skillet with a heavy lid, try aluminum foil. Wrapping foil around your cooking vessel and perforating it works like a built-in release valve that allows just enough steam to build before releasing the excess. Ingredients:

• 3 tablespoons peanut oil
• 3 ounces popcorn kernels (approximately 1/2 cup)
• 1/2 teaspoon popcorn salt
• 3 tablespoons unsalted butter

Instructions:

1. Place the oil, popcorn, and salt in a large, 6-quart, metal mixing bowl. Cover with heavy-duty aluminum foil and poke 10 slits in the top with a knife.

2. Place the bowl over medium heat and shake constantly using a pair of tongs to hold the bowl. Continue shaking until the popcorn finishes popping, approximately 3 minutes.

3. Remove the bowl from the heat and carefully remove the foil. Stir in any salt that is on the side of the bowl.

4. Melt the butter in the microwave. Slowly drizzle over the popcorn, while spinning the bowl. Serve immediately.
